Mashed potato casserole, known as ‘perunalaatikko’ in Finnish, is a traditional dish commonly served during Christmas in Finland.

Peel and boil the potatoes until tender. Drain and mash.

In a skillet, melt the butter and sauté the chopped onion and minced garlic until soft.

Add the sautéed onion and garlic mixture to the mashed potatoes. Mix well.

Stir in the milk, salt, and black pepper.

Beat the eggs and add them to the potato mixture. Mix until well combined.

Transfer the potato mixture to a greased casserole dish.

Sprinkle breadcrumbs and grated cheese on top.

Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until golden and crispy.
