  1. Preheat the oven to 150°C.
  2. In a clean mixing bowl, whisk the egg whites until stiff peaks form.
  3. Gradually add the caster sugar, one tablespoon at a time, while continuing to whisk until the mixture is glossy and holds its shape.
  4. Gently fold in the cornstarch and white vinegar.
  5. Line a baking tray with parchment paper and spoon the meringue mixture onto the tray, shaping it into a round pavlova shape.
  6. Place the pavlova in the oven and immediately reduce the temperature to 120°C. Bake for 90 minutes.
  7. Turn off the oven and leave the pavlova inside to cool completely.
  8. Once cooled, carefully transfer the pavlova to a serving plate.
  9. Whip the cream until soft peaks form and spread it over the pavlova.
  10. Decorate with assorted fruits and mint leaves.
  11. Serve immediately and enjoy!
