Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.

Add minced garlic and cook for another minute.

Sprinkle flour over the onions and stir well to combine.

Pour in the white wine and simmer until it has reduced by half.

Add the broth, bay leaves, and thyme. Bring to a boil, then reduce heat and simmer for 30 minutes.

While the soup is simmering, preheat the oven to 400°F (200°C).

Place the baguette slices on a baking sheet and toast in the oven until golden brown.

Remove the bay leaves and thyme sprigs from the soup. Season with salt and pepper to taste.

Ladle the soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and sprinkle grated Gruyere cheese over the bread.
