Cheesy Squash
Butternut squash is a great source of vitamin A and potassium, which are important for maintaining healthy vision and a strong immune system.

Preheat the oven to 375°F (190°C).

Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves in a baking dish.

In a small saucepan, melt 1 tablespoon of butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.

Brush the melted butter and garlic mixture over the cut sides of the squash. Season with salt and black pepper.

Bake the squash in the preheated oven for about 30-35 minutes, or until it becomes tender.

In a separate bowl, combine grated cheddar cheese, milk, breadcrumbs, and chopped parsley.

Remove the squash from the oven and fill each half with the cheese mixture.

Return the filled squash to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

Allow the cheesy squash to rest for 5 minutes before serving.
