Vegetarian Shepards Pie
Shepherd’s Pie is traditionally made with minced lamb or mutton, but this vegetarian version uses vegetables as a filling.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 80 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Peel and chop the potatoes. Boil them in salted water until tender. Drain and mash with butter and salt.

In a separate pan, heat olive oil and sauté onion and garlic until softened.

Add carrots, peas, and vegetable stock. Cook until vegetables are tender.

Preheat the oven to 200°C (400°F).

In a baking dish, spread the vegetable mixture evenly. Top with mashed potatoes.

Bake for 20-25 minutes or until the top is golden brown.

Let it rest for 10 minutes before serving.
