Instructions

Preheat the oven to 350°F (175°C). Grease and flour a bunny-shaped cake pan.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-
Gradually mix in the dry ingredients alternating with the milk, beginning and ending with the dry ingredients.
-
Pour the batter into the prepared cake pan and smooth the top. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
-
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
-
In a small bowl, mix the powdered sugar with enough water to make a thick glaze. Divide the glaze into separate bowls and add food coloring to each bowl to create different colors.
-
Once the cake is cooled, spread the glaze over the cake to create a colorful bunny design.
-
Decorate the bunny cake with shredded coconut for fur, mini marshmallows for the tail, candy eyes, pink jelly beans for the nose, and chocolate chips for the mouth.
-
Serve and enjoy!
