Gradually add the vegetable broth, stirring constantly to prevent lumps.

Add the potatoes, parsnips, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes and parsnips are tender.

Remove the bay leaf and use an immersion blender to puree the soup until smooth.
