Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking constantly.

In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and stir in the vanilla extract and salt.

Slowly pour the hot cream mixture into the chocolate mixture, whisking constantly.

Divide the mixture among 4 ramekins or small oven-safe dishes.

Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.

Bake for 20-25 minutes, or until the pots de creme are set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let cool to room temperature.

Refrigerate for at least 2 hours, or until chilled and set.
