Julienne the cucumber and carrot into thin strips. Chop the green onions and mince the garlic cloves.

In a small bowl, mix together soy sauce, rice vinegar, sesame oil, salt, and crushed red pepper.

In a large bowl, combine the cooked noodles, cucumber, carrot, green onions, and minced garlic.
