Peel and thinly slice the potatoes.

Add the salt, black pepper, and fresh thyme. Cook until the sauce thickens.

In a greased baking dish, layer half of the sliced potatoes. Pour half of the sauce over the potatoes.

Repeat with the remaining potatoes and sauce.

Sprinkle the cheddar cheese on top.

Cover the dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
