Preheat the oven to 180°C (350°F).

Peel and cube the butternut squash. Steam or boil until tender.

In a pan, heat olive oil and sauté the chopped onion and minced garlic until fragrant.

Add the spinach and cook until wilted. Remove from heat.

In a bowl, whisk together eggs, milk, salt, and black pepper.

Roll out the pie crust and line a pie dish. Prick the crust with a fork.

Spread the cooked spinach mixture over the crust.

Layer the cooked butternut squash cubes on top.

Crumble goat cheese over the squash.

Pour the egg mixture over the filling.
