Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the mixed fruits with sugar, cinnamon, and vanilla extract. Toss until well coated.

In a separate bowl, mix together the flour, oats, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

Spread the fruit mixture evenly in a baking dish and sprinkle the crumble mixture on top.

Bake for 35-40 minutes or until the fruit is bubbling and the crumble is golden brown.

Remove from the oven and let it rest for 10 minutes before serving.

Serve warm with vanilla ice cream or whipped cream, if desired.
