Loaded Cauliflower
Loaded Cauliflower is a popular low-carb alternative to loaded potato skins. It provides a similar taste and texture while being much lower in carbohydrates.

Preheat the oven to 400°F (200°C).

Cut the cauliflower into florets and place them in a large bowl.

Drizzle the cauliflower with olive oil and sprinkle with salt, black pepper, garlic powder, and paprika. Toss to coat.

Spread the seasoned cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly browned.

While the cauliflower is roasting, cook the bacon in a skillet until crispy. Remove from the skillet and crumble.

Once the cauliflower is done, remove it from the oven and sprinkle with cheddar cheese. Return to the oven for a few minutes, until the cheese is melted.

Remove the cauliflower from the oven and top with crumbled bacon, chopped green onions, and a dollop of sour cream.
