Samosa (Spicy and Tangy Potato-Green Pea Pockets)
Samosas are believed to have originated in the Middle East and were introduced to India during the Delhi Sultanate in the 13th century.

Boil the potatoes until tender, then peel and mash them. Set aside.

Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onion, green chilies, and ginger. Sauté until onion turns golden brown.

Add green peas and cook for a few minutes. Then add mashed potatoes, coriander powder, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Mix well and cook for another 5 minutes.

Remove the mixture from heat and let it cool.

Preheat the oven to 375°F (190°C).

Take a samosa pastry sheet and cut it into two equal halves. Fold each half into a cone shape.

Fill the cone with the potato-green pea mixture and seal the edges using water.

Repeat the process for all the pastry sheets.

Heat oil in a deep frying pan. Fry the samosas until golden brown and crispy. Drain excess oil on a paper towel.

Serve hot with chutney or ketchup.
