Preheat the oven to 200°C (390°F).

In a small bowl, mix the instant coffee powder and ground cinnamon.

Roll out the puff pastry sheets and sprinkle the coffee and cinnamon mixture evenly on each sheet.

Cut each sheet into 3 equal rectangles.

Place the rectangles on a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until golden brown.

Remove from the oven and let them cool completely.

Once cooled, slice each rectangle in half horizontally.

Whip the cream with powdered sugar until stiff peaks form.

Spread a layer of whipped cream on the bottom half of each rectangle.

Place the top half of the rectangle on the cream layer.

Dust with powdered sugar.
