Zippy Cheese Cauliflower
Cauliflower is a member of the cruciferous vegetable family, which also includes broccoli, kale, and Brussels sprouts.

Preheat the oven to 400°F (200°C).

Cut the cauliflower into florets and place them in a baking dish.

In a bowl, combine the cheddar cheese, parmesan cheese, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and black pepper. Mix well.

Pour the cheese mixture over the cauliflower, making sure to coat all the florets.

Bake in the preheated oven for 25 minutes or until the cauliflower is tender and the cheese is golden and bubbly.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh parsley before serving.
