Panade is a traditional French dish that was originally created as a way to use up stale bread.

Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and cook until softened, about 5 minutes.

Add the vegetable broth and bring to a simmer.

In a large bowl, whisk together eggs, milk, grated cheese, salt, black pepper, and fresh herbs.

Tear the stale bread into large pieces and add them to the skillet. Stir until the bread absorbs the liquid.

Transfer the mixture to a greased baking dish.

Pour the egg mixture over the bread mixture, ensuring all the bread is soaked.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
