Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-
Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Fold in the cranberries, pears, and walnuts.
-
Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
-
In a medium bowl, beat together the cream cheese, powdered sugar, orange zest, and orange juice until smooth.
-
Once the cake has cooled, spread the cream cheese-orange frosting over the top. Decorate with additional cranberries, pears, and walnuts if desired.
-
Allow the cake to rest for at least 1 hour before serving to allow the flavors to meld. Enjoy!
