Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large bowl, combine the flour, granulated sugar, baking powder, cinnamon, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, beat the eggs and vanilla extract. Stir in the apples. Add the apple mixture to the flour mixture and mix well.

Spread the batter evenly into the prepared baking dish. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Allow the bars to cool in the baking dish for 30 minutes. Then, cut into squares.
