  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, combine the grated zucchini, all-purpose flour, baking powder, baking soda, salt, garlic powder, onion powder, dried basil, dried oregano, and grated Parmesan cheese.
  4. In a separate bowl, whisk together the eggs, olive oil, Greek yogurt, and milk.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Fold in the shredded cheddar cheese.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
