Grate the zucchini and squeeze out excess moisture.

In a large bowl, combine the grated zucchini, all-purpose flour, baking powder, baking soda, salt, garlic powder, onion powder, dried basil, dried oregano, and grated Parmesan cheese.

In a separate bowl, whisk together the eggs, olive oil, Greek yogurt, and milk.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Fold in the shredded cheddar cheese.
