The Yule Log, or Bûche de Noël, is a traditional French dessert served during Christmas. It is named after the log-shaped wooden blocks that were traditionally burned on the hearth during the Christmas season.

  1. Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the cake flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, beat the eggs and granulated sugar until light and fluffy. Add in the vanilla extract and mix well.
  4. Gradually add the dry ingredients to the egg mixture, alternating with the milk. Mix until well combined.
  5. Pour the batter into the prepared jelly roll pan and spread it evenly.
  6. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  7. While the cake is baking, prepare a clean kitchen towel dusted with powdered sugar.
  8. Once the cake is done, remove it from the oven and immediately invert it onto the prepared kitchen towel.
  9. Gently roll up the cake with the towel, starting from the short end. Let it cool completely.
  10. In a mixing bowl, whip the whipping cream until it forms stiff peaks. Add in the powdered sugar and espresso powder, and mix until well combined.
  11. Unroll the cooled cake and spread the whipped cream mixture evenly over the surface.
  12. Roll the cake back up, without the towel, and transfer it onto a serving platter.
  13. Melt the dark chocolate and butter in a microwave-safe bowl.
  14. Pour the melted chocolate over the cake roll, spreading it evenly on the surface.
  15. Use a fork to create a bark texture on the chocolate.
  16. Decorate the Yule Log with maraschino cherries if desired.
  17. Place the Yule Log in the refrigerator and let it rest for at least 1 hour before serving.
  18. Serve chilled and enjoy!
