In a bowl, whisk together the flour, baking powder, salt, and sugar.

In a separate bowl, beat the egg and then stir in the milk and yogurt.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Heat a non-stick pan over medium heat and melt a small amount of butter.

Pour a ladleful of batter onto the pan and spread it into a thin circle.

Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

Repeat with the remaining batter.

Once all the pancakes are cooked, spread each pancake with a layer of yogurt and sprinkle with mixed berries.

Roll up the pancakes and drizzle with maple syrup.
