  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a medium bowl, mash the ripe bananas with a fork.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the unsalted butter and granulated sugar until light and fluffy.
  5. Beat in the egg and vanilla extract until well combined.
  6. Gradually add the mashed bananas and Greek yogurt to the butter mixture, mixing well after each addition.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in the chopped walnuts.
  9. Pour the batter into the prepared loaf pan and smooth the top.
