Zucchini bread became popular in the United States during the 1960s when home gardeners found themselves with an abundance of zucchini and started experimenting with different recipes.

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the eggs. Add the grated zucchini, honey, melted coconut oil, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Slice and serve.
