Preheat the oven to 350°F (175°C). In a bowl, combine the whole wheat flour, graham cracker crumbs, baking soda, and salt.

In a separate large bowl, cream together the softened butter, brown sugar, honey, and vanilla extract until smooth. Beat in the egg.

Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Stir in the dark chocolate chips.

Drop rounded tablespoonfuls of dough onto ungreased baking sheets.

Bake for 10-12 minutes, or until lightly golden brown. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
