  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and press it into a 9-inch (23 cm) pie dish.
  3. Cut the kabocha squash into small cubes and steam until tender.
  4. In a skillet, sauté the onion and garlic in olive oil until softened.
  5. In a bowl, whisk together the eggs, milk, gruyere cheese, thyme, salt, and black pepper.
  6. Add the cooked kabocha squash, sautéed onion and garlic to the egg mixture and mix well.
