Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, combine the grated zucchini, melted coconut oil, honey, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped walnuts.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
