  1. Preheat the oven to 180°C. Crush the digestive biscuits and mix with melted butter. Press the mixture into the base of a greased springform pan.
  2. Melt the white chocolate and set aside to cool slightly.
  3. In a large bowl, beat the cream cheese, caster sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the melted white chocolate.
  4. Pour the mixture over the biscuit base and smooth the top. Bake for 45-50 minutes until set.
  5. Turn off the oven and leave the cheesecake to cool in the oven for 1 hour. Remove from the oven and let it cool completely.
  6. Refrigerate for at least 3 hours or overnight.
  7. Serve chilled with a dollop of whipped cream.
