White Chocolate and Cranberry Scones

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the cold butter into small cubes and add it to the flour mixture. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Gently fold in the white chocolate chips and dried cranberries.

Transfer the dough onto a lightly floured surface and knead it a few times until it comes together.

Pat the dough into a circle about 1-inch (5 cm) thick. Cut the circle into 8 wedges.

Place the scones onto the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
