Webb poppers are named after their creator, Chef John Webb, who first made them in his restaurant in Texas in the 1980s. They quickly became a popular dish and are now a favorite appetizer in many Tex-Mex restaurants.

Preheat the oven to 375°F (190°C). Cut the jalapeno peppers in half lengthwise and remove the seeds and membranes.

In a bowl, mix together cream cheese, cheddar cheese, and crumbled bacon. Stuff each jalapeno half with the cheese mixture.

In separate bowls, place flour, beaten egg, and breadcrumbs. Dip each stuffed jalapeno half into the flour, then the egg, and finally the breadcrumbs, making sure they are coated evenly.

Heat vegetable oil in a frying pan over medium heat. Fry the coated jalapeno halves until golden brown, about 2-3 minutes per side. Remove from the pan and place on a paper towel-lined plate to drain excess oil.

Transfer the fried jalapeno halves to a baking sheet and bake in the preheated oven for 10 minutes.

Remove from the oven and let them rest for 5 minutes before serving.
