  1. In a large bowl, combine the flour, salt, and sugar. Cut the butter into small cubes and add it to the flour mixture. Using a pastry cutter or your hands, cut the butter into the flour until the mixture resembles coarse crumbs.
  2. In a small bowl, mix together the vinegar and ice water. Gradually add the vinegar mixture to the flour mixture, stirring with a fork until the dough comes together.
  3. Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F (190°C). Roll out one of the dough disks on a lightly floured surface to fit your pie dish. Transfer the rolled-out dough to the pie dish and trim any excess. Fill the pie with your desired filling.
  5. Roll out the second dough disk and use it to cover the top of the pie. Trim any excess and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  6. Bake the pie according to your filling recipe's instructions. Allow the pie to cool before serving.
