Victoria Sponge Cupcakes
Victoria sponge cake is named after Queen Victoria, who was known to enjoy a slice with her afternoon tea.

Preheat the oven to 180°C (350°F) and line a cupcake tin with cupcake cases.

In a mixing bowl, cream together the butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Sift in the self-raising flour and fold it in gently until just combined.

Stir in the vanilla extract and milk.

Divide the batter evenly among the cupcake cases.

Bake in the preheated oven for 15-20 minutes, until golden and a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and allow them to cool completely.

Once cooled, use a small knife to cut a small well in the center of each cupcake.

Fill each well with a spoonful of strawberry jam.

Sift powdered sugar over the top of the cupcakes before serving.
