  1. Preheat the oven to 180°C.
  2. Roll out the pie crust and cut out circles to fit into tart pans.
  3. In a saucepan, combine the mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until thickened.
  4. Fill the tart pans with the berry mixture.
  5. In a small bowl, beat the egg with water to make an egg wash. Brush the edges of the tart crust with the egg wash.
  6. Bake the tarts in the preheated oven for 20 minutes or until the crust is golden brown.
  7. Remove from the oven and let the tarts cool for 30 minutes.
