Vegetarian Shepherd’s Pie
Shepherd’s Pie traditionally uses lamb, but this vegetarian version substitutes lentils and mushrooms for a hearty and delicious filling.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 80 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 17.

Preheat the oven to 200°C (400°F).

Peel and chop the potatoes, then boil them in salted water until tender.

Drain the potatoes and mash them with butter and milk until smooth. Set aside.

In a large pan, heat olive oil and sauté the onion, carrot, celery, and garlic until softened.

Add mushrooms, lentils, vegetable stock, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for 10 minutes.

Transfer the lentil mixture to a baking dish and spread the mashed potatoes on top.

Bake for 20-25 minutes, or until the potatoes are golden and the filling is bubbling.

Let it rest for 10 minutes before serving.
