Vegetarian Pie Pockets

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.

Add bell pepper, zucchini, mushrooms, and spinach to the skillet. Cook until vegetables are tender.

Season with salt, black pepper, paprika, and dried thyme. Stir well.

Roll out the pie crust sheets and cut them into squares.

Place a spoonful of the vegetable mixture onto each square of pie crust.

Sprinkle grated cheese on top of the vegetables.

Fold the squares in half to form pockets and seal the edges.

Place the pockets on a baking sheet and bake for 20-25 minutes, or until golden brown.
