Pasties are traditional baked pastries that originated in Cornwall, England. They were originally made for miners to take to work as a complete meal in a convenient handheld form.

  1. Preheat the oven to 180°C (350°F).
  2. Peel and dice the potatoes and carrots. Finely chop the onion and garlic.
  3. Heat olive oil in a large pan over medium heat. Add the onion and garlic and cook until softened.
  4. Add the diced potatoes, carrots, peas, vegetable broth, thyme, salt, and black pepper to the pan. Cook for 10 minutes, or until the vegetables are tender.
  5. Roll out the puff pastry sheet and cut it into 4 equal squares.
  6. Spoon the vegetable filling onto one half of each pastry square. Fold the other half over the filling and press the edges together to seal.
  7. Place the pasties on a baking sheet lined with parchment paper.
  8. Bake for 30 minutes, or until the pasties are golden brown.
  9. Remove from the oven and let them rest for 10 minutes before serving.
