  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, carrot, and garlic. Cook until the vegetables are tender.
  3. In a large bowl, combine the cooked vegetables, mixed vegetables, vegetable broth, dried herbs, salt, and pepper.
  4. Cut the bread into cubes and place half of them in the bottom of a greased baking dish.
  5. Pour half of the vegetable mixture over the bread cubes.
  6. Layer the remaining bread cubes on top, followed by the remaining vegetable mixture.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.
  9. Allow the dish to rest for 10 minutes before serving.
