  4. In a separate pot, cook rice according to package instructions.
  5. In a large mixing bowl, combine cooked rice, vegetable mixture, vegetable broth, dried thyme, salt, and black pepper. Mix well.
  6. Transfer the mixture to a greased casserole dish and sprinkle grated cheese on top.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
