Valentines Day Linzer Heart Cookies
Linzer cookies are named after the city of Linz in Austria, where they originated in the 17th century.

In a bowl, mix together the all-purpose flour and ground almonds.

In a separate bowl, cream together the granulated sugar and unsalted butter until light and fluffy.

Add the egg yolks and lemon zest to the butter mixture and mix well.

Gradually add the flour mixture to the butter mixture and mix until a dough forms.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one disk of dough on a lightly floured surface to about 1/8-inch (3mm) thickness.

Use heart-shaped cookie cutters to cut out cookies from the rolled dough.

Place half of the heart-shaped cookies on the prepared baking sheet.

Spoon a small amount of raspberry jam onto the center of each cookie on the baking sheet.

Use a smaller heart-shaped cookie cutter to cut out the centers of the remaining heart-shaped cookies.

Place the cookies with the centers cut out on top of the jam-covered cookies on the baking sheet.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

Remove from the oven and let cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.

Dust the cookies with powdered sugar before serving.
