  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. Cut the rhubarb stalks into small pieces and set aside.
  3. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  4. In a separate bowl, melt the butter and mix in the milk, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Sprinkle the brown sugar evenly into the greased muffin tin.
