Upside-Down Rhubarb Muffins
Rhubarb is actually a vegetable, but it is often used in sweet dishes like desserts and pies.

Preheat the oven to 350°F (175°C). Grease a muffin tin.

Cut the rhubarb stalks into small pieces and set aside.

In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.

In a separate bowl, melt the butter and mix in the milk, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Sprinkle the brown sugar evenly into the greased muffin tin.

Place a few pieces of rhubarb on top of the brown sugar in each muffin cup.

Spoon the muffin batter over the rhubarb, filling each cup about 2/3 full.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 10 minutes, then invert onto a wire rack to cool completely.
