  2. Scrub the potatoes and pierce them with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.

  5. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
  6. In a bowl, mash the potato flesh with butter, sour cream, cheddar cheese, chopped green onions, salt, and pepper.
  7. Spoon the mashed potato mixture back into the potato shells.
  8. Top each potato with shredded cheddar cheese and bacon slices.
