Preheat the oven to 375°F (190°C).

Wash and scrub the potatoes. Pierce each potato several times with a fork.

Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.

Remove the potatoes from the oven and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.

In a large bowl, mash the potato flesh with sour cream, butter, cheddar cheese, chopped bacon, sliced green onions, salt, and black pepper.

Spoon the mixture back into the potato shells.

Place the filled potato shells in a baking dish and bake for an additional 15-20 minutes, or until heated through and golden brown on top.

Remove from the oven and let rest for 10 minutes before serving.
