  2. Wash and scrub the potatoes. Pierce each potato several times with a fork.

  5. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.
  6. In a large bowl, mash the potato flesh with sour cream, butter, cheddar cheese, chopped bacon, sliced green onions, salt, and black pepper.
  7. Spoon the mixture back into the potato shells.
  8. Place the filled potato shells in a baking dish and bake for an additional 15-20 minutes, or until heated through and golden brown on top.
