Preheat the oven to 325°F (160°C).

In a mixing bowl, combine the coconut shortbread crust ingredients and press into the bottom of a greased 9-inch springform pan.

In a separate bowl, beat the cream cheese and sugar until smooth.

Add the eggs, one at a time, beating well after each addition.

Stir in the vanilla extract, lime juice, pineapple juice, and mango puree.

Pour the mixture over the crust in the springform pan.

Bake for 55-60 minutes, or until the center is set.

Remove from the oven and let cool in the pan for 10 minutes.

Transfer to a wire rack and let cool completely.

Refrigerate for at least 2 hours, or overnight.

Before serving, top with whipped cream and toasted coconut flakes.
