  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 50-60 minutes, or until the center is set and the top is lightly browned. Remove from the oven and let cool in the pan for 10 minutes.
  6. Refrigerate for at least 2 hours, or until chilled and set.
  7. Before serving, top the cheesecake with pineapple chunks, mango chunks, kiwi slices, whipped cream, and toasted coconut flakes.
  8. Slice and serve chilled.
