Preheat the oven to 400°F (200°C).

Clean and slice the mushrooms.

Peel and slice the carrots.

In a large pan, heat the olive oil over medium heat.

Add the garlic and sauté for 1 minute.

Add the mushrooms, carrots, thyme, salt, and black pepper. Cook for 5 minutes.

Transfer the mixture to a baking dish and roast in the preheated oven for 15 minutes.

Remove from the oven and let it rest for 5 minutes.

Serve hot and enjoy!
