Preheat the oven to 350°F (175°C).

Place the chocolate chip cookies on a baking sheet.

Bake the cookies for 10 minutes or until golden brown.

Remove the cookies from the oven and let them cool completely.

Take a scoop of chocolate ice cream and place it on the bottom side of one cookie.

Top the ice cream with another cookie, bottom side down.

Repeat with the remaining cookies and ice cream.

Place the dark and milk chocolate chunks in a microwave-safe bowl.

Microwave the chocolate chunks in 30-second intervals, stirring in between, until melted and smooth.

Dip the edges of each ice cream sandwich into the melted chocolate.

Place the sandwiches on a baking sheet lined with parchment paper.

Freeze the sandwiches for at least 2 hours or until the chocolate is set.
