Peel the plantains and cut them into 1-inch thick slices.

Heat the vegetable oil in a large skillet over medium-high heat.

Fry the plantain slices in batches for about 3-4 minutes on each side, or until they are golden brown.

Remove the fried plantains from the skillet and place them on a paper towel-lined plate to remove excess oil.

Using a tostonera or the bottom of a glass, flatten each fried plantain slice.

Return the flattened plantains to the skillet and fry them again for about 2-3 minutes on each side, or until they are crispy and golden brown.

Remove the tostones from the skillet and sprinkle them with salt.

In a small bowl, mix together the mayonnaise, ketchup, garlic powder, paprika, and lime juice to make the dipping sauce.

Serve the tostones with the mayo-ketchup dipping sauce on the side.
