Instructions

  1. In a saucepan, heat the milk, sugar, and butter until the butter melts. Remove from heat and stir in the vanilla extract.
  2. In a separate bowl, whisk the egg yolks. Slowly pour the hot milk mixture into the egg yolks while whisking continuously.
  3. Gradually add the flour to the mixture, whisking until smooth. Stir in the rum.
  4. Cover the batter and let it rest in the refrigerator for at least 2 hours, or overnight.
  5. Preheat the oven to 425°F (220°C). Grease a cannele mold with butter and dust with flour.
  6. Fill each mold cavity with the batter, leaving a small space at the top for expansion.
  7. Bake for 10 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for about 50 minutes, or until the canneles are caramelized and set.
  8. Remove from the oven and let the canneles cool in the mold for a few minutes. Carefully remove them from the mold and let them cool completely on a wire rack.
  9. Serve the canneles at room temperature or chilled.
