Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add diced tomatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

Meanwhile, cook the noodles according to package instructions. Drain and set aside.

Use an immersion blender or transfer the tomato mixture to a blender. Blend until smooth.

Return the blended soup to the pot. Season with salt and pepper.

Add cooked noodles to the soup and stir to combine.

Let the soup rest for 5 minutes to allow the flavors to meld.
