  1. Preheat the oven to 180°C.
  2. Crush the digestive biscuits and mix with melted butter. Press the mixture into the base of a greased springform cake tin.
  3. In a large bowl, beat the cream cheese, caster sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the double cream.
  4. Pour the cream cheese mixture over the biscuit base in the cake tin. Smooth the top with a spatula.
  5. Bake in the preheated oven for 45-50 minutes, or until set. Remove from the oven and let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  6. Once cooled, drizzle the caramel sauce over the top of the cheesecake.
  7. Break the Toblerone into small pieces and sprinkle over the caramel sauce.
  8. Refrigerate the cheesecake for at least 2 hours, or overnight, to set.
  9. Serve chilled and enjoy!
